Beef and Cabbage Casserole

Delicious dish for those cold winter nights.

  • 1 lb. ground beef
  • 1/2 C. chopped onion
  • 1 clove garlic, minced
  • 1 quart stewed tomatoes
  • 1 8 oz. can tomato sauce
  • 1/2 C. instant rice
  • 1 medium head green cabbage, coarsely chopped
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 Tbs. sour cream

In a skillet, sauté ground beef, chopped onion and garlic until beef is no longer pink and onions are translucent. Add rest of ingredients, mixing well. Cover and simmer for one hour. Add water, if necessary. Remove bay leaf before serving. Spoon sour cream over top and warm.

Yield: 6 servings

  • Aren't casseroles usually cooked in the oven? more casseroles it seems today are done on the stovetop, much faster I guess?
