Beef and Mushroom Oven Stew

Ingredients
- 1 1/2 C Stew Meat Mix*
- 16 oz Can sliced carrots (drained)
- 12 Pearl onions (or frozen small whole onions)
- 2 C Sliced fresh mushrooms
- 3 Tbs Quick cooking tapioca
- 2 Tbs Prepared mustard
- 2 tsp Instant beef bouillon granules
- 1 tsp Sugar
- 1/2 tsp Salt
- 2 1/4 C Tomato juice
- 1 C Water
Directions
Place Stew Meat Mix*, carrots, onions, and mushrooms in a 2 quart casserole. In a medium size bowl, combine tapioca, mustard, beef bouillon granules, sugar, and salt. Stir in tomato juice and water. Pour over meat and vegetables. Cover and bake in a 350 F oven for 50 to 60 minutes or until heated through and slightly thickened. Stir once after 30 minutes and again before serving.
