Beef and Sweet Potato Quesadilla

Ingredients
- 1 lb of beef
- 0.2 c. of marinara sauce
- 2 medium sweet potatoes
- 0.2 c. of sugar
- 8 flour tortillas
- 1 c. of mozzarella, shredded
- 4 tsp of olive oil

Microwave sweet potatoes on high for 15 minutes, until tender. Cook beef in olive oil and garlic until cooked through. Meanwhile, in a bowl, combine onions and sugar, mix well. Add sweet potatoes to the mixture, mash potatoes with the fork, add salt and pepper to taste. Divide potato filling among 4 tortillas. Add beef and mix well. Heat one teaspoon of olive oil and marinara sauce in a large skillet over medium heat, and add 1 quesadilla to skillet, top with cheese, and cook until crispy. Repeat with remaining tortillas and serve.
