  • 1lb ground beef
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 14oz canned crushed tomatoes
  • salt
  • pepper
  • 1 box penne pasta
  • 1lb fresh mozzarella, sliced

Cook the pasta according to the box, drain and set aside. Preheat the oven to 400F and grease a baking dish. Heat the oil in a large skillet and add the onion and garlic. Season with salt and pepper and cook until soft. Add the meat and cook until browned, breaking up any large chunks. Add the tomatoes and bring to a simmer. Add the pasta to the meat and stir together. Pour into the baking dish and toss in the cherry tomatoes. Top with fresh mozzarella and bake for 20-30 minutes, or until bubbly and the cheese is melted.
