Beef and Veggie Soup with Rice

Ingredients
- 1 lb. lean beef stew meat
- seasoned pepper
- one 14-oz. can beef broth
- one 6.8-oz. box beef-flavored rice and vermicelli mix
- one 10-oz. pkg. frozen peas and carrots
- 2 1/2 C. vegetable juice
Directions
Sprinkle stew meat with seasoned pepper, brown in non-stick skillet, drain, and place in a large crockpot. Add broth, rice, and vermicelli mix, peas, carrots, vegetable juice, and 2 cups water. Cover and cook on low for 6-7 hours.
