A great way to stretch a little bit of meat, but everyone will think they got a lot to eat! Pretty too!

Ingredients

  • 1 lb. beef sirloin steak, cut into bite sized cubes
  • 2 cans small white potatoes, already cooked and peeled in can
  • 1 large onion, cut into wedges
  • 2 green bell peppers, cut into bite sized pieces
  • 20 small mushrooms
  • 20 small cherry or grape tomatoes
  • 1 C. Italian dressing
  • 1/2 C. teriyaki sauce
  • 2 Tbs. dry ranch dressing mix
  • 10-20 flour tortillas (6-7 inches size)

Cut steak into bite sized cubes. Place meat in a glass or plastic container and add Italian dressing, teriyaki sauce, and dry ranch dressing mix. Cover with plastic wrap and marinate in refrigerator for 1 hour or more. Cut onions, peppers, and canned potatoes into bite sized cubes. Starting with a piece of onion, alternate the ingredients in the following order: onion, meat, green pepper, potato. Repeat. Place skewers in a large container and pour remaining meat marinade over the finished skewers. Grill or broil skewers until meat is to desired doneness and potatoes are golden brown, turning frequently. Serve by wrapping a flour tortilla around skewer and removing the bamboo skewer.
