Beef Lettuce Taco

If you're on a low-carb diet, try making lettuce tacos!

  • 1 Tbs. extra-virgin olive oil
  • 1 lb. ground sirloin
  • 1 small yellow onion, chopped
  • 2 garlic cloves, chopped
  • 1/2 red bell pepper, finely chopped
  • 2 Tbs. Worcestershire sauce
  • 2 Tbs. chili powder
  • 1/2 C. tomato sauce
  • salt and pepper, to taste
  • 1 large head iceberg lettuce, quartered
  • 10 oz. shredded cheddar cheese
  • 4 scallions, chopped
  • 1 C. shopped green olives

Add olive oil to a medium nonstick skillet over medium-high heat and brown meat.  Add onions, garlic, and bell peppers. Season with Worcestershire sauce, chili powder, salt, and pepper.  Cook beef mixture for 5 more minutes, then add tomato sauce.  Stir to combine and turn off heat. Now, put fillings (cheese, scallions, and olives) in small bowls and assemble tacos by taking a leaf of lettuce, adding a large spoonful of meat, then adding as much other toppings as you'd like.
