Beef Pepper Steak

This pepper steak recipe is great because it's quick, tasty and hearty!

  • 1/4 C. vegetable oil
  • 3/4 C. chopped onion
  • 1 clove garlic, crushed
  • 8 oz. tomato sauce
  • 1 tsp. sugar
  • 2 tsp. ground ginger
  • 1/4 C. soy sauce
  • 2 1/2 lb. flank steak, cut into very thin diagonal strips
  • 1 dash pepper, or to taste
  • 1 tsp. butter
  • 2 C. raw white rice

In a pot with a tight-fitting lid, place 4 C. water with 2 tsp. salt and bring to boil over high heat. Add 1 tsp. butter and raw rice and bring back to boil, cover. Reduce heat to low and let cook for 25 minutes. At end of time, turn off the heat, raise lid and stir.

In large skillet heat oil over high heat. When hot, add flank steak slices, garlic, and ginger for 5 minutes or until everything is heated through stirring CONSTANTLY. Remove contents of pan into container. Add pepper and onions to remaining drippings in skillet and cook for 2 minutes. Add soy sauce, tomato sauce, sugar, and pepper. Cook 3 minutes. Add meat and bean sprouts and cook 2 minutes longer. Add beef to mixture and serve over cooked rice.
