Beef & Roasted Apples
Serving Size / Yield
- 1 lb. beef rump steak, thinly sliced
- Chopped Lettuce
- 1/4 cup beef stock
- 1 tsp. minced fresh rosemary
- 1/2 square of chopped bittersweet chocolate
- 1 tbs. minced shallot
- 1/4 cup port wine
- 1 tbs. balsamic vinegar
- 4 Large Apples, Horizontally Sliced
Start by placing the sliced apples on a baking sheet.
Sprinkle with cinnamon and bake for 20 minutes.
While that's baking, take a skillet and add oil to it on high heat.
Add beef slices and cook for 2 to 3 minutes or until finished.
Cook beef in batches and remove from skillet when done.
Now start making the sauce.
In that same skillet, lower the heat to a simmer and stir in minced shallot.
Cook for about a minute, then add in port wine and balsamic vinegar.
Cook for about 2 to 3 minutes, the mixture should have the consistency chocolate syrup.
Add in beef stock and rosemary and continue to simmer.
Whisk in chocolate until melted.
Put baked apples on a plat and add beef on top.
Add chopped lettuce on top and drizzle chocolate sauce over that.
