Beef Stew

Served with cornbread, this beef, potato, and vegetable stew is a hearty meal.

Ingredients

  • ½ lb. beef chuck
  • 2 medium onions, cubed
  • 4 medium potatoes, cubed
  • 1 (10 oz. package) frozen mixed vegetables
  • 1 tsp. oil
  • 2 Tbs. white flour
  • 3 ¼ C. water
  • dash of pepper
  • ¼ tsp. garlic powder

Directions

Cut beef into cubes. Brown on all sides in oil. Add three C. of water and simmer three quarters of an hour. Add onions and potatoes, simmer one half hour longer. Add pepper, garlic powder, and frozen mixed vegetables. Cook another 10 minutes or until potatoes are done. Make a paste with remaining ¼ C. water and 2 Tbs. of flour. Add paste to stew while stirring. Cook stew about 3 minutes more until thickened; add water if stew becomes too thick.

Makes four servings, 1 ¼ C. each.
