  • 2 med. onions, chopped
  • 2 garlic cloves
  • 2 tsp. salt
  • 1/2 tsp. crushed red pepper
  • 1/2 C. red wine
  • 1 green pepper, cut in squares
  • 3 lbs. beet, cut in 1-inch squares and floured
  • 1/2 tsp. oregano
  • 1 C. beef bouillon
  • 1 can whole tomatoes
  • 1 12-oz. pkg. noodles, cooked

Brown onions in olive oil in a heavy skillet. Remove to a separate bowl. Brown the beef. Crush garlic in salt. Add onions, garlic, oregano, red pepper and bouillon to beef. Cover to simmer slowly for 2 hours or until meat is tender. Add more bouillon, if necessary. Add wine, cover. Steam for 3 minutes. Add tomatoes and cook uncovered 15 minutes. Add green pepper and cook another 15 minutes. Add part of sauce to hot cooked noodles and mix. Serve as bed for the beef mixture.
