  • 1 T. olive oil
  • 1 C. sliced carrots
  • 1 white onion, sliced
  • 2 medium sized sweet potatoes, peeled and cubed
  • 15 oz. precooked roast beef
  • 12 oz. beef gravy
  • ½ tsp. rosemary
  • 1 frozen pie crust
  • 1 T. chopped parsley
  • Salt (to taste)
  • Pepper (to taste)

Preheat your oven to 400 degrees. In a oven compatible skillet over medium-high heat cook oil, carrot, onion, and sweet potatoes. Cook until the veggies are soft and add in beef gravy. Bring to a simmer for 4 minutes.

Thaw the frozen pie crust and roll out on a lightly floured flat surface. Roll the crust to be the size of the skillet and cut a few slits into the dough to allow for air to escape. Place the dough over the beef stew.

Place the skillet in the oven for 20-30 minutes until the crust in golden brown. Sprinkle with parsley, salt, and pepper and serve.
