Beef Stroganoff

This is a very filling meal that feeds a bunch when you're stretching your dollars!

Ingredients

  • 1 large pkg. stewing beef
  • 1-2 large onions
  • 2-3 Tbs. minced garlic
  • 3-4 cans mushrooms
  • 1 can cream of chicken soup
  • 1 container sour cream
  • 2 tsp. flour (optional)
  • Salt and pepper to taste
  • 1 bag egg noodles
  • 6-7 large potatoes

Directions

In a large skillet, combine beef, garlic and onions. Cook until beef is browned through and onions are transparent. Add mushrooms and cook for 5-7 minutes. Add soup and bring to boil. Once boiling, turn down to low, cover and simmer for 10 minutes. Add sour cream and cook only until sour cream is warm. Cook the noodles, and mash the potatoes. When dishing it out put a thin layer of potatoes on plate, add layer of noodles and then add a scoop of beef mixture.

  • My grandmother made this kind of recipe during the depression--mashed potatoes layered with noodles absorb the gravy and give a different texture to the food and cost a lot less than meat. "Filling" meant more than "carbs" then. 10 lbs. of potatoes cost around $3-5 or less depending on the time of year and 16 oz. of egg noodles go for $2.39. Finally, this is a "white" sauce, not "brown," and frequently cream of chicken is used for more favor than mushro

  • Mashed potatoes and pasta? Why not one or the other? Too many carbs with both and too much work to boil potatoes and pasta. How much does this cost? Agree with other comments. Cream of chicken in a beef dish? Why not cream of mushroom?

  • You mention 2 tsp of flour in the ingredients, but it's not in the directions. When do you use the flour?

  • Sounds good, but what size meat? 1pd, 1 1/2, 2 pds??? What size sour cream?? small, medium or large. Makes a difference in the outcome of the receipe.
