  • 2 spaghetti squash, halved and pitted
  • 1 teaspoon olive oil
  • ½ onion, diced
  • 3 cloves garlic, minced
  • 1lb ground beef
  • 1 teaspoon salt
  • 1 can crushed tomatoes
  • ¼ cup parsley, chopped

Preheat the oven to 400F. Place the squash, cut side down, in a baking dish and add an inch of water. Roast for 45-55 minutes or until soft, place on cooling rack and let cool. Heat the olive oil in a skillet, add the onion and cook for 5 minutes, or until translucent. Stir in the garlic and cook for an additional 30 seconds. Add the beef to the skillet and cook for 6-7 minutes, browning it and breaking up bigger chunks. Stir in the tomatoes and bring to a simmer, cooking for 5-10 minutes. Add salt and pepper to taste. Scoop and shred some of the squash and mix it into the meat sauce. Scoop the mix back into the squash and top with chopped parsley.
