These dumplings are tasty and filling. They’re just the thing to turn a soup or stew into a hearty meal.

Ingredients

  • 1 C. flour + 2 Tbs. all-purpose flour
  • 2 tsp. baking powder
  • pinch salt
  • 1/4 lb. beef suet
  • 1 Tbs. chopped fresh parsley
  • 1 mint leaf, chopped
  • pinch sage
  • 1 C. + 2 Tbs. whole wheat breadcrumbs
  • 1/3 C. water

Directions

Sift the flour, baking powder and salt in a bowl. Blend the suet with the flour. Mix in the chopped herbs and breadcrumbs. Add the water and mix gently to form a firm but light dough. Do not knead. Form the dough into a long sausage shape and divide into 12 pieces. Roll each piece into a ball. Steam for 15 minutes, and add to a stew or soup just before serving.

Serve with: Stew with Burgundy Wine
