Ingredients

  • 1lb Brussels sprouts, trimmed
  • 2 carrots, peeled and sliced
  • 2 tablespoons maple syrup
  • 1 onion, chopped
  • 1½lbs beef chunk roast
  • 1 tablespoons canola oil
  • ½ cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 8oz hard apple cider
  • salt
  • pepper

Directions

Heat the oil in a skillet and add the beef to brown on all sides. Transfer to crockpot and add broth, salt and pepper. Add the Brussels sprouts, onion and carrots and toss with the beef. In a bowl combine the honey, broth, Worcestershire sauce and apple cider. Pour this over the contents of the crockpot, cover and cook for 7-8 hours, or until the meat is tender.
