Beefy Cheesy Tostada Pizza

This dish is a mix between a pizza and a tostada. Serve it as a main course or a hearty appetizer!

Ingredients

  • 2 Tbs. yellow cornmeal
  • 2 C. packaged biscuit mix
  • 1/2 C. water
  • 1 lb. ground beef
  • 3 Tbs. chopped green chilies
  • 1 envelope taco seasoning mix
  • 3/4 C. water
  • one 15-oz. can refried beans
  • 1 C. shredded sharp American cheese
  • 1 C. shredded lettuce
  • 1 tomato, chopped
  • 1/2 C. chopped onion
  • taco sauce

Directions

Sprinkle a well-greased 12-inch pizza pan with cornmeal.  Combine biscuit mix and 1/2 cup water.  Stir with fork until dough follows fork around bowl.  Turn dough out on lightly floured surface; knead 5-6 times.  Roll to 14-inch circle and pat into a prepared pizza pan, crimping edges.  Bake in 425 degree oven for 12 minutes or until golden brown. 

Meanwhile, in a skillet, brown meat and drain off excess fat. Stir in chilies, taco seasoning mix, and 3/4 cup water, then bring to a boil.  Reduce heat and simmer, uncovered, for 10-15 minutes. 

Spread refried beans over crust and top with meat mixture. Bake in 425 degree oven for 8-10 minutes.  Top with cheese and bake for 2 minutes more. Pass lettuce, tomato, onion, and taco sauce to sprinkle over top.
