  • 8 ounces ground beef
  • 2 teaspoons olive oil
  • 1 package of mixed vegetables
  • 1/2 cup pasta of your choice, uncooked
  • Salt and pepper to taste
  • 1 tablespoon tomato paste
  • 1 can beef broth
  • 2 cups fresh tomatoes, chopped
  • 1 can Garbanzo beans
  • 1/4 cup basil

Add oil in large saucepan over medium heat. Stir mixed vegetables, pasta, and salt and pepper, to taste. Cook until vegetables and pasta are soft. Increase heat before adding ground beef. Cook until beef is browned. Add in tomato paste. Mix. Add broth, tomatoes and beans. Reduce heat to simmer and cook for 30 minutes or soon. Garnish with basil.
