Beefy Rice and Zucchini Skillet

With a Swiss cheese and tomato sauce, this beef and zucchini skillet is a delicious meal.

Ingredients

  • ¾ C. regular long grain rice
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 2 medium zucchini (about 1 lb.), cut into ½ inch cubes
  • 1 (8 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 1 C. water
  • 1 ¾ tsp. sugar
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ¼ lb. Swiss cheese, shredded (1 C.)

Directions

Prepare rice as label directs. Meanwhile in 10 inch skillet over medium high heat, cook ground beef and onion until pan juices evaporate and meat is well browned, stirring often. Stir in zucchini, tomato sauce, tomato paste, water, sugar, salt, pepper, and cooked rice; over high heat, heat to boiling. Reduce heat to low; simmer 20 minutes, uncovered, until zucchini is tender, stirring often. Sprinkle cheese over mixture in skillet; cover and cook about 3 minutes or until cheese is melted. Garnish with corn chips.
