These stuffed peppers are anything but ordinary. This recipe updates a classic with Mexican inspired twist by seasoning the beef with mouthwatering spices and switching bell peppers for tender Anaheim peppers.

  • 6 Anaheim peppers
  • 1 pound of ground beef
  • ½ cup of salsa
  • 1 cup of canned black beans, drained
  • 2 teaspoons of chili powder
  • 1 teaspoon of garlic powder
  • ½ teaspoon of cumin
  • Sour cream, to garnish
  • Green onions, to garnish

Preheat the oven to 350 degrees and heat a skillet over medium heat. Add the ground beef, chili powder, garlic powder, and cumin to the skillet and sauté for 5 minutes, or until no longer pink. Next, add the salsa and beans and cook for an additional 3 minutes. Remove the skillet from heat and slice the peppers down the middle. Finally, fill the peppers with the beef and bake for 30 minutes. Drizzle sour cream on top and add a sprinkle of green onions. Serve as an appetizer or with rice and beans to make a delicious meal.
