  • 5-6 drumsticks
  • 1 whole head garlic, broken into cloves and peeled
  • 4 oz. bacon strips, sliced
  • 2 carrots, cut into pieces
  • 4 bay leave
  • 1 Tbs. juniper berries, optional
  • 1 Tbs. dried thyme
  • Salt and pepper, to taste
  • 1 1/2 C. dark beer

Heat the oven to 400 degrees. Season the chicken with salt and pepper. Place the chicken in a baking dish and add the garlic, bacon, carrots, and thyme. Pour the beer over the chicken into the dish. Bake for 15 minutes, turn, and bake for an additional 15 minutes. Repeat until the chicken is caramelized in the beer, approximately 4 turns.
