Beer Batter Fried Smelts

This is the tastiest way to eat smelts. Fry them up with a little bit of beer!

  • 1 lb. smelts
  • 1 1/2 C. flour
  • 1 1/4 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1/4 C. lemon juice
  • 3/4 C. beer
  • oil

Heat oil in deep-fat fryer until it reaches 375 degrees. Meanwhile, rinse smelts under cold water. Pat dry and cut into serving-size pieces. Mix flour, baking powder, baking soda and salt in medium bowl. Place 1/2 C. of mixture into a shallow dish. Stir lemon juice and beer into remaining flour mixture in bowl. Dip smelt portions in flour mixture, then into beer batter. Drop into hot oil and fry, turning once, until golden brown on both sides. Drain on paper towels.
