  • 2 quarts corn oil
  • 1/4 C. whole milk
  • 1 C. flour
  • 3/4 C. beer
  • 1/2 tsp. kosher salt
  • 2 cage-free eggs
  • 2 lb. cheese curds, broken into pieces

Warm oil in a deep-fryer to 375 degrees F. Combine milk, flour, beer, salt and eggs in a medium mixing bowl. Whisk until ingredients are well blended.

Coat cheese curds in batter. Shake off any excess batter and add cheese curds to deep fryer in small batches. Cook for 1 minute or until curds are well browned. Drain on paper towel and serve warm.
