Beer-Battered Onion Rings

- 3 C all-purpose flour
- 2 eggs, separated
- 1 C beer
- 4 Tbs. butter, melted
- 3 onions, sliced into rings
- 2 qts. olive oil
Sift flour in a bowl. In another bowl, whisk egg yolks. Mix in beer, butter and salt.
Set aside 1 cup of flour for dipping the onion rings. Add the egg yolk mixture into the remaining flour and combine. Allow the mixture to stand 30 to 60 minutes.
Heat olive oil in a deep fryer to 375 degrees.
Beat the egg whites in a bowl. Add into the batter.
Cover each onion ring in flour and then dip into the batter. Deep fry until golden brown.
Drain on paper towels and serve.
