Beer Braised Fish Tacos

- 2 Tbs vegetable oil
- 1 lb cod fillets; cut into cubes
- 1 onion; chopped
- 1 cucumber; chopped
- 1 C beer
- 1 red pepper; circular slices
- 1/4 lettuce; chopped
- 8 lime wedges
- Fresh cilantro; chopped
- 8-inch tortillas
In a large skillet, put the oil in and heat over medium fire. Cook some of the onions and fish for about 10 to 15 minutes. Once the onions feel tender and the fish is partially cooked, put in some salt to taste and stir.
Then add in the beer, increase the heat and allow the ingredients to boil in the skillet for 10 minutes uncovered. Later, reduce the heat and leave the ingredients to simmer for 5 extra minutes. Remove from heat.
Prepare the tortilla wraps. Scoop some of the fish and onion mixture onto the tortillas and top it off with the chopped cucumber, lettuce, red peppers and the remaining onions. Garnish with the fresh cilantro.
Place the finished tacos on a plate and serve with lime wedges on the side.
