  • 1 whole chicken
  • olive oil
  • 1 can of beer
  • 2 tablespoons barbecue sauce
  • 1 bunch spring onion, trimmed
  • 1 tablespoons smoked paprika
  • 1 tablespoon coriander seeds
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cumin seeds
  • 1 dried red chili pepper
  • 1 teaspoon salt
  • 1 tablespoon pepper
  • 1 tablespoon dark brown sugar

Preheat the oven to 400F. In a food processor, combine the paprika, cayenne, coriander seeds, cumin seeds, dried chili pepper, salt and pepper. Process until fine powder remains. Drizzle the chicken with olive oil and sprinkle the rub on top, using your hands to rub the chicken thoroughly. Open the can of beer, you only need 1/3 of it so drink or toss the rest. Position the chicken on top of the can so that it looks like it’s sitting up. Position the chicken on a roasting tray and place in the oven to cook for 1 hour and 15 minutes, or until golden brown and cooked through. Brush the chicken with barbecue sauce and cook for an additional 10 minutes. Once ready, carefully remove the beer can and sprinkle with the spring onions. Serve with your favorite sides and enjoy.
