Beer-Grilled Skirt Steak

- 1 orange, thinly sliced with peel
- 1/2 onion, thinly sliced
- 4 cloves garlic, halved and smashed
- 2 1/4 lb. skirt steak
- salt and pepper
- 1 C. light color lager beer
- 1/2 C. soy sauce
In a shallow glass baking dish, lay 1/2 orange, 1/2 onion slices, 1/2 garlic pieces at the bottom. Season the steak with salt and pepper. Lay the steak in the dish and top with the remaining orange, onion, and garlic Pour in the soy sauce and beer. Cover and marinate for at least 1 hour.
Heat the grill to medium-high heat. Remove the meat from the marinade and discard. Cook the steak for 4 minutes on each side, or until desired level of doneness is achieved.
