Mix up the usual taco night with chicken and guacamole tacos! Allow the chicken to marinate overnight to help it absorb all the flavors of the marinade fully.

  • 1 C. dark Mexican beer
  • 2 Tbs. dark sesame oil
  • 1 Tbs. garlic, finely chopped
  • 1 tsp. dried oregano
  • 1 tsp. sea salt
  • 1/2 tsp. pepper
  • 1/4 tsp. ground cayenne pepper
  • 6 boneless, skinless chicken thighs
  • 2 C. guacamole
  • 8-12 corn tortillas

Mix the beer, sesame oil, garlic, oregano, salt, pepper, and cayenne pepper in a bowl. Put the chicken thighs in a large resealable bag and pour in the marinade. Remove as much air as possible and seal the bad. Refrigerate for at least 2 hours.

Grill the chicken until fully cooked and browned on all sides, about 4 to 5 minutes per side. Remove from the grill and cut into strips after letting it rest for 5 minutes. Warm the tortillas on the grill and then spoon guacamole into the middle. Top with chicken and serve.
