Beet and Mandarin Salad
- one 8-oz. package refrigerated steamed and peeled baby beets
- 3 Tbs. fruity champagne vinaigrette of your choice
- one 11-oz. can mandarin oranges, drained
- 1 Tbs. chopped fresh mint
- 1 Tbs. crumbled goat cheese
Cut beets into quarters, pour vinaigrette over them, and stir. Add mandarins and toss gently. Sprinkle mint and goat cheese crumbles on top and serve.
