Beet and Mandarin Salad

This fall salad is a deliciously sweet salad with a touch of savory goat's cheese. Yum!

  • one 8-oz. package refrigerated steamed and peeled baby beets
  • 3 Tbs. fruity champagne vinaigrette of your choice
  • one 11-oz. can mandarin oranges, drained
  • 1 Tbs. chopped fresh mint
  • 1 Tbs. crumbled goat cheese

Cut beets into quarters, pour vinaigrette over them, and stir.  Add mandarins and toss gently.  Sprinkle mint and goat cheese crumbles on top and serve.
