  • 1 roasted beet
  • 1 can cooked chickpeas
  • 2 minced cloves garlic
  • 2 ¼ tablespoons tahini
  • ¼ cup olive oil
  • 1 tablespoon lemon juice
  • Zest of 1 lemon

Quarter the roasted beet and blend it in a food processor. Add the chickpeas, garlic, tahini, lemon juice and lemon zest. Blend until the hummus is smooth, drizzling in the olive oil as you blend. Season with salt if necessary.
