Beet Salad

Ingredients
- 4 roasted beets, peeled
- 2 navel oranges, peeled and sliced
- 2 Tbs. virgin olive oil
- 1 tsp. lemon juice
- salt
- pepper
- 2 Tbs. chopped mint
Directions
Cut beets into 1/4-inch slices. Alternate beet and orange slices on a platter. Whisk oil and lemon juice with salt and pepper to taste. Pour the dressing over the beets and oranges. Scatter mint on top. Serve immediately.
