  • 4 slices bacon, chopped
  • 2-3 lb. chuck roasts, cubed
  • 2 onions, diced
  • 4 C. mushrooms, sliced
  • 4 cloves garlic, minced
  • 3 T. all-purpose flour
  • 1 bottle beer
  • 2 carrots, chopped
  • 1 C. beef broth
  • 2 T. Dijon mustard
  • Salt and pepper to taste
  • 1 tsp. thyme

In a large pot, cook bacon, set aside (leaving drippings in pot) and add in beef. Brown beef and add in onion, garlic, and mushrooms and sauté until tender. Stir in flour, cook for a minute, and pour in beer. Stir well and add in remaining ingredients. Bring to a boil, reduce heat, cover, and simmer over low for 2 hours.
