Ingredients

  • 1 lb. beef roast, cut into pieces
  • 1 (14 oz.) can diced tomatoes with green chilies
  • 1 (14 oz.) can beef broth
  • 1 T. chili powder
  • ½ tsp. cumin
  • Salt and pepper to taste
  • ¼ tsp. garlic powder
  • 2 C. brown rice
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped

Directions

In a large skillet, brown beef for 8 to 10 minutes until no longer pink. Stir in undrained tomatoes with chilies, broth, chili powder, salt, pepper, cumin, and garlic powder. Bring to a boil, add in rice and bell peppers, and reduce heat to a simmer. Simmer for 10 minutes as liquid is absorbed. Stir well and serve.
