  • 1 cup flour
  • ½ cup milk
  • 3 eggs
  • 2 tablespoons melted butter
  • 2 tablespoons sugar
  • 2 teaspoon vanilla
  • ½ teaspoon salt
  • ½ cup water
  • 1 cup whipping cream
  • 8 ounces cream cheese
  • 1 cup sugar
  • 2 cups mixed berries

Blend the flour, milk, eggs, melted butter, water, salt, 2 tablespoons sugar, and 1 teaspoon vanilla together on low speed until the mixture is smooth. Chill the mixture in an airtight contained for 1 hour. Whip the cream until peaks form. Then beat the cream cheese with the remaining vanilla and sugar in a separate bowl. Spray a large skillet with cooking spray and then pour ¼ cup crepe batter into the pan. Swirl the pan over medium heat and cook for 30 seconds -1 minute. Flip and cook for another 30 seconds. Repeat with the remaining batter. Fill each crepe with ¼ cup cream mixture and mixed berries. Roll the crepes up to serve.
