Best Candied Yams Every Time

My kids used to tease me that I made the best yams chips ever. My candied yams came out crunchy with great flavor. I don't know what made me try this but I can't make enough of them for the holiday meals. I had one guest that took her place in front of them to make sure she got her fill.

Ingredients

  • 6 lbs. yams (not sweet potatoes, rinsed and patted dry
  • 1 1/2 C. brown sugar
  • 1 1/2 stick butter
  • 1 tsp. vanilla extract
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • 2 Tbs. light corn syrup
  • dash of salt

Directions

Preheat oven 350 degrees. Place yams on baking sheet pierce with fork, bake about 45 minutes or until just fork tender. Do not over cook as they will be baked again. Peel and slice 1/4-inch thick. Arrange in baking dish. In a medium saucepan, add remaining ingredients and cook over medium heat until sugar has dissolved and mixture is a syrupy consistency pour over yams and bake uncovered about 30 minutes.
