Who doesn't love a zesty chicken breast on their favorite sandwich? This chicken breast is best enjoyed cold! Try it with some nice sourdough bread, crunch sweet peppers and crispy lettuce.

  • 4 thin sliced chicken breasts
  • 1/2 teaspoon fresh cracked pepper
  • 1/2 teaspoon lemon zest
  • 1 chicken bouillon cube
  • 1/4 finely minced onion
  • 2 garlic cloves
  • 1 cup warm water
  • 1 dash cayenne pepper
  • 1/4 cup white wine
  • 1 tablespoon olive oil

Dissolve bouillon cube in warm water and set aside. Heat oil in large frying pan and add half the lemon zest, then add chicken and wine to the pan and cook on low heat. Once chicken is partially cooked, add bouillon/water mixture, onion, garlic, remainder of zest and cayenne pepper. Allow mixture to simmer and flip chicken breasts to ensure cooking is even. Remove chicken from pan wen most of water is absorbed. Crack pepper over chicken and allow to cool.
