Best Chicken Salad Ever
Ingredients
- 2 C. cooked chicken breasts, diced
- 1 1/2 C. light mayonnaise
- 1/4 C. dijon mustard
- 1 Tbs. celery salt
- 1/2 yellow bell pepper
- 1/2 orange bel pepper
- 1 bunch green onions
- 2 hard boiled eggs
Directions
In a large bowl, stir together chicken, mayonnaise, mustard, and celery salt. Seed, core and dice both bell peppers. Chop green onions. Dice hard boiled eggs. Stir each of these into the chicken mixture. Cover and chill overnight.

That does seem like a lot of mayo though. I don't think the Olive Oil and cider vinegar would be the same as the mayo, but I sure would cut down on it the first time and see if it needs that much. Maybe with it having to set overnight the mayo gets sucked up.
