This chicken salad is a favorite among my friends and family. Makes great sandwiches or by itself.

  • 2 C. cooked chicken breasts, diced
  • 1 1/2 C. light mayonnaise
  • 1/4 C. dijon mustard
  • 1 Tbs. celery salt
  • 1/2 yellow bell pepper
  • 1/2 orange bel pepper
  • 1 bunch green onions
  • 2 hard boiled eggs

In a large bowl, stir together chicken, mayonnaise, mustard, and celery salt. Seed, core and dice both bell peppers. Chop green onions. Dice hard boiled eggs. Stir each of these into the chicken mixture. Cover and chill overnight.

  • This does sound really good. Think I would try it on a crossant.
    That does seem like a lot of mayo though. I don't think the Olive Oil and cider vinegar would be the same as the mayo, but I sure would cut down on it the first time and see if it needs that much. Maybe with it having to set overnight the mayo gets sucked up.

  • Wow, that is a lot of mayonaise. Have you ever considered just x tra virgin olive oil an good ol apple cider vinegar?

  • I like the Hellman's Light may and keep it on hand all the time for sandwiches, but it is not creamy enough for me, to use in salads or in devilled eggs
