This recipe for Mongolian beef is better than any restaurant version. It’s easy and homemade! Need I say more?

  • 2 lbs. pot roast
  • 2 T. cornstarch
  • 1 T. olive oil
  • 1 T. soy sauce
  • 4 green onions, sliced
  • 2 tsp. ginger, minced
  • 3 cloves garlic, minced
  • ½ C. dark brown sugar
  • ¼ C. water

Mix the pot roast, soy sauce, water, garlic, dark brown sugar, and ginger into the crockpot. Let it cook for 8-10 hours on a low heat setting. Remove the pot roast from the liquid and place it on a cutting board. Pour the remaining liquid in a bowl. Shred up the meat and place it back into the crockpot. In a small pan, mix together 2 T. cornstarch and 4 T. water. Add ½ C. of the liquid form the slow cooker to the pan. Continue to mix over a medium heat. Once it’s thickened, pour it into the crockpot over the meat. Serve the meat over rice and top it off with green onions.
