Best Ever Crockpot Potatoes

Ingredients
- 6 med. potatoes, peeled
- one 8-oz. pkg. cheddar cheese, shredded and divided
- one 10-oz. can cream of chicken soup
- 1/4 C. butter, melted
- one 8-oz. carton sour cream
- one 3-oz. can french-fried onions
Directions
Cut potatoes into 1-inch strips. Toss potatoes with some salt and pepper, plus 2 cups cheese. Place in slow cooker. Combine soup, butter, and 2 tablespoons water. Pour over potatoes. Cover and cook on low for 6-8 hours or until potatoes are tender. Stir in sour cream and remaining cheese. When ready to serve, sprinkle onion rings over potatoes.
