Best Ever Potato Salad

When my children were little we use to go camping quite often, friends and family would always ask me to bring my potato salad. Through the years my salad became a tradition at Bar-B-Q's and camping trips. It looks delicious and taste even better.

  • 5 lbs. Irish potatoes, peeled, quartered, and boiled
  • 5 hard boiled eggs, sliced in small pieces
  • 8 slices crisp bacon, crumbled
  • 1 can sliced olives
  • 3/4 C. chopped dill pickles or dill relish
  • 1/2 C. sour cream
  • 1/2 C. mayonnaise
  • 2 Tbs. spicy brown mustard
  • 5 garden onions, chopped
  • salt and pepper
  • paprika

Peel the potatoes, quarter and place in large pot. Boil until done. Meanwhile fry your bacon until crisp. drain on paper towel. Crumble when cooled. When potatoes are done, rinse and place in large bowl. Start adding remaining ingredients, mix together and stir until you have a chunky smashed texture. Sprinkle the paprika over the top. Chill then serve. You can make the night before as this recipe gets better after the flavors marry together.Note: Eggs can be hard boiled in the same pot as the potatoes.
