  • 4 T. unsalted butter, softened
  • 8 slices rye bread
  • 1 C. thousand island dressing
  • 16 slices cooked corned beef brisket
  • 12 T. sauerkraut, drained
  • 8 slices Swiss cheese

Preheat your skillet over medium-high heat. Butter one side of each bread slice. Spread two tablespoons on one bread slice and top with corned beef, sauerkraut, and cheese. Drizzle with two more tablespoons of dressing and cover with another slice of bread. Repeat until four sandwiches are assembled. Carefully place each sandwich onto the preheated skillet and cook for about three minutes on each side, or until cheese is melted.
