This delicious meatloaf is just like your mother used to make. It’s soft and lightly spicy from the red onion. This recipe is super simple to make but yummy all the same!

  • 2 lb. ground beef
  • ½ medium red onion, chopped
  • ½ C. mushrooms, minced
  • 1 large celery stalk, minced
  • ½ C. panko breadcrumbs
  • 1 ½ tsp. garlic, minced
  • 1 egg, beaten
  • 1 tsp. salt
  • Glaze
  • ½ C. ketchup
  • 2 Tbs. water

Preheat the oven to 350 degrees. Combine all of the minced veggies with the ground beef. Add the egg into the meat mix. Place the beef in a loaf pan and bake for 30 minutes. Combine the ketchup and water and glaze it over the loaf. Place the loaf back in the oven for an additional 30 minutes. Add more glaze.
