  • 1/2 C. butter
  • 1/2 C. shortening (butter flavored)
  • 1 1/2 C. sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 3 1/2 C. flour
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3 egg whites
  • 3 C. powdered sugar
  • 1 tsp. lemon extract
  • food coloring
  • 2 T. water
  • sprinkles (optional for garnish)

In a large bowl, beat together shortening and butter. Slowly add sugar and beat until fluffy. Add eggs one at a time and mix well after each. Gradually mix in vanilla, flour, cream of tartar, baking soda, and salt. Cover and chill overnight. Preheat oven to 375°F and lightly grease a cookie sheet. Roll out dough onto a floured surface until 1/4-inch thick and use a cookie cutter for desired shape. Place on cookie sheet and bake for seven minutes. Remove and let cool completely. In a large bowl, mix together egg whites until foamy. Slowly add powdered sugar on low until shiny. Add lemon extract and mix for five minutes. Drip in food coloring and stir to desired color. Add two tablespoons of water and mix well. Once cookies are entirely cooled, cover with the icing. Top them off with your sprinkles of choice and serve.
