  • 1 1/4 C. flour
  • 1 1/2 C. quick oats
  • 1/2 C. rolled oats
  • 1 C. brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 C. butter, room temperature
  • 1 C. cherry filling
  • 2 C. fresh cherries, stems removed and seeded
  • 1/3 C. sugar
  • 3-4 T. cornstarch
  • 1 lemon, juiced

In a small saucepan, combine cherries, 1/3-cup sugar, lemon juice, and cornstarch. Bring to a boil and continue to boil for 10 minutes. Once mixture has thickened, remove from heat and let cool. Cover and refrigerate. Preheat your oven to 350°F and grease the inside of a 9x9-inch baking dish. In a large bowl, combine flour, oats, brown sugar, baking powder, and salt. Cut in butter and work mixture to form crumbly dough. Press 2/3 of the crumb mixture into the bottom of your prepared baking dish. Spread with chilled cherry filling. Sprinkle with the remaining crumble mixture. Bake for 30 minutes. Allow dessert to cool completely before serving.
