Bishop's Bread (Coffee Cake)

This simple coffee cake recipe is the perfect staple for a back-up dessert. Ready in a half hour, it couldn't be easier!

Ingredients

  • 2 1/2 C. all purpose flour
  • 2 C. firmly packed brown sugar
  • 1/2 tsp. salt
  • 1/2 C. shortening
  • 1 tsp. baking powder
  • 3/4 C. sour milk
  • 1 egg
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon

Directions

Mix flour, sugar, salt and shortening. Reserve 3/4 C. of this mixture for top crumbs. Add remaining ingredients. Beat briskly until batter is smooth. Pour into 2 greased 9 inch pie plates and scatter reserved crumbs over top. Bake at 350 degrees for 25-30 minutes.

Note: Chopped nuts or raisins or both may be added to batter and extra cinnamon sprinkled on top if desired.
