  • 3 eggs
  • 4 rashers of bacon, diced
  • 1 small onion diced
  • 2 Tbs. cheddar cheese
  • Salt
  • Ground black pepper
  • Dash of thickened cream
  • 1 C. broccoli
  • 1/3 C. green onion
  • ¾ C. tomato, diced
  • Sprinkle of parsley
  • 3-4 pre-made frozen puff pastry squares

Preheat oven to 350 degree F. Lightly grease 2 cupcake pans (12 cups each) with cooking spray. In a medium bowl, mix the eggs, bacon, onion, broccoli, green onion, tomatoes, cheese, salt and pepper to taste, cream, and parsley with a fork until mixed together well. Using a pastry cutter, glass, or a knife, cut circles out of the defrosted puff pastry and place into the greased tray. Spoon the mixture into the pastry. Place in oven and bake for 15-20 minutes or until golden brown. Remove and let each quiche cool on a cooling rack before serving.
