Bite-Sized Chicken Pot Pies

- 1 Tbs Olive Oil
- 1 C pre-cooked chopped Chicken
- 16 oz frozen peas, thawed
- 11 oz cream of Celery Soup
- 2 Tbs Mint, chopped
- 1 tsp Salt
- 8 oz Crescent Roll Dough
Preheat oven to 400º. Mix all non-dough ingredients in bowl and stir to combine. Cut crescent roll dough out into squares and place them on baking sheet.
Fill each square with 2 tablespoon of filling, then cover over with another piece of crescent roll dough.
Optionally form pot pie rolls into decorative shapes using cookie cutters, or simply crimp the dough's edges together with a fork's tines.
Bake in oven for 20-25 minutes, or until golden. Serve.
