In 20 minutes create a plate of buttery, savory pretzel bites with some spicy cheese dipping sauce and you have yourself one of the greatest comfort foods in the comfort of your own home.

  • 1 1/2 C. warm water
  • 2 1/4 tsp. instant yeast
  • 1 tsp. salt
  • 1 Tbs. packed brown sugar
  • 1 Tbs. unsalted butter, melted
  • 4 C. flour
  • 1/2 C. baking soda
  • 1 egg, beaten
  • Sea salt for topping
  • 2 C. whole milk (sauce)
  • 1/4 C. unsalted butter (sauce)
  • 1/4 C. flour (sauce)
  • 2 C. cheddar cheese, grated (sauce)
  • 2 Tbs. hot sauce of choice (sauce)
  • 1 tsp. cayenne (sauce)
  • Salt and pepper to taste (sauce)

Preheat oven to 425 degrees F. Dissolve yeast in warm water and stir for 1 minute. Add salt, sugar, and butter and stir. Add flour 1 cup at a time and mix until dough forms. Add fourth cup so dough isn't sticky. Knead dough on lightly floured surface for 3 minutes. Shape into a ball, place in mixing bowl, cover, and let dough rest for 5-10 minutes. When it's ready, cut dough into 6 sections and roll each into 20-inch long ropes. Cut ropes into 2 inch pieces. Mix baking soda into 9 cups boiling water. Drop 10 dough pieces into water and let sit for 15 seconds. Place bites onto lined baking sheets. Brush beaten egg over bites, sprinkle with sea salt, and bake for 10 minutes. Bites may need 5 extra minutes if they are not cooked to preference.
While dough is baking, start making cheese sauce by heating milk in saucepan until bubbling forms. In another saucepan, melt butter and sprinkle flour on top. Stir until paste forms and whisk in milk. Add cheese, hot sauce, and cayenne to mixture and stir. Add salt and pepper as needed. Serve with bites.
