  • Crust:
  • 200g. wafer cookies, or other cookies of choice
  • 100g. butter, melted and cooled
  • Filling:
  • 400g. cream cheese
  • 200g. mascarpone cheese
  • 150g. icing sugar
  • 1 tsp. vanilla extract
  • 175 ml double cream
  • Topping:
  • 70g. hard toffee
  • 50g. dark chocolate

For the base, use 10g melted butter to grease a 9 inch pie tin and line with baking parchment. Put the cookies into a freezer bag, push out air, seal, and use a rolling pin to crush the cookies to crumbs. Pour the cookies into a mixing bowl; add remaining melted butter and mix. Pour the cookie mix into pan and pat down into base of pie tin. Transfer to crust to fridge and refrigerate for 1 hour. For filling in a mixing bowl, mix the cream cheese, mascarpone, icing sugar, and vanilla extract. Use an electric mixture to combine. In a separate bowl, beat cream until it thickens, add to cream cheese mix and beat both until mixture is combined. Remove crust from fridge and pour in filling return to fridge and let set overnight or for 4 hours. For topping, melt toffee in a bowl in the microwave for 20 seconds. Use a spoon to drizzle on top of cheesecake. Repeat the same steps for the dark chocolate. Place cheesecake bake in fridge for 5 minutes to firm the topping.
