  • 2 medium avocados, chopped
  • 2 roma tomatoes, chopped
  • 1/2 large cucumber, chopped
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1 (15 oz.) can corn, drained
  • 2 radishes, chopped
  • 1/4 C. red onion, diced
  • 4 C. romaine hearts, chopped
  • 1 Tbs. oil
  • 1 Tbs. cilantro, diced
  • 1 Tbs. lime juice
  • 1/4 tsp. chili powder
  • 1 tsp. cumin

In a bowl, combine the avocados, tomatoes, cucumber, black beans, corn, radishes, red onion, and romaine. In another bowl, mix the oil, cilantro, lime juice, chili powder, and cumin. Stir until well combined. Pour over the salad and toss to mix.
